In this recipe guide: pumpkin cream soda with caramel cold foam; pomegranate Cosmo mocktail with orange syrup; and an Abstinence blood orange spritz, with a FRE sparkling wine variation.
Pumpkin cream soda with caramel cold foam
A creamy, bubbly fall mocktail with pumpkin pie flavor and a soft caramel finish. Serve it in a tall glass so guests can see the soda and foam layers.
Yield: 1 drink · Prep: 5 minutes · Cook: none · Glass: 16-ounce highball or tall glass
Ingredients
For the pumpkin cream soda:
1¼ fluid ounces Monin Pumpkin Pie Syrup
1 fluid ounce half-and-half, chilled
6 fluid ounces club soda, chilled
Ice
For the caramel cold foam:
¾ fluid ounce heavy cream, cold
½ fluid ounce 2% milk, cold
¼ fluid ounce caramel syrup
A light dusting of cinnamon, to finish
How to make it
In a small chilled cup, stir together the heavy cream, milk and caramel syrup. Froth with a handheld milk frother for about 30 seconds, until airy and softly thickened. Stop before it becomes stiff whipped cream.
Add ice to your glass, leaving room for the foam. Pour in the pumpkin syrup and half-and-half.
Slowly add the club soda and gently stir to combine. Do not shake a carbonated drink.
Spoon the caramel cold foam onto the soda. Finish with a little cinnamon and serve immediately.
Tips for the best pumpkin mocktail
Use pumpkin beverage syrup, rather than spooning pumpkin puree directly into the soda, for a smoother drink. Keep the soda and dairy cold, and froth the topping just before serving. Caramel syrup mixes more easily than a thick caramel sauce.
This is a dessert-style drink. If you prefer less sweetness, start with 1 fluid ounce of pumpkin syrup and adjust after tasting. Different syrup brands will change the flavor and sweetness.
Make ahead: measure the syrup and keep the dairy refrigerated; add ice, soda and freshly frothed foam when ready to serve. The dairy version contains milk.
Recipe foundation: the soda uses Monin’s published Pumpkin Pie Cream Soda proportions; the topping scales its 3:2:1 cream, milk and syrup cold foam method with caramel syrup. The combined drink is a home-bar variation.
Pomegranate Cosmo mocktail with lime and orange syrup
This alcohol-free Cosmopolitan-style drink combines tart pomegranate, fresh lime and fragrant orange syrup. Shake it well and serve in a chilled coupe for a polished cocktail presentation.
Yield: 1 drink · Prep: 5 minutes with prepared syrup · Cook: none for the drink · Glass: coupe or martini glass
Ingredients
3 fluid ounces 100% pomegranate juice, chilled
¾ fluid ounce freshly squeezed lime juice
½ fluid ounce orange syrup, plus a little more to taste
½ fluid ounce cold water
Ice, for shaking
Orange twist, for garnish
Easy orange syrup
Ingredients: ½ cup sugar, ½ cup water and the peel of 1 washed orange, avoiding the bitter white pith.
Combine sugar, water and orange peel in a small saucepan. Warm gently, stirring until the sugar dissolves.
Simmer gently for 5 minutes. Remove from the heat and let the syrup cool with the peel in it.
Strain into a clean covered container and refrigerate. Chill before making your drink. This makes roughly ¾ cup; the exact yield depends on evaporation.
How to make the pomegranate mocktail
Chill your coupe. Add pomegranate juice, lime juice, orange syrup and cold water to a cocktail shaker.
Fill the shaker with ice and shake firmly for 10–15 seconds.
Taste a small sample. If your juice is especially tart, add orange syrup 1 teaspoon at a time and shake again.
Strain into the chilled glass. Twist the orange peel over the drink to release its aroma, then use it as the garnish.
Tips and make-ahead notes
Use fresh lime juice and unsweetened pomegranate juice so you can control the balance. The cold water adds a little dilution without spirits; shaking with ice chills and dilutes it further.
You can prepare the orange syrup the day before and keep it refrigerated. For a party, multiply the drink ingredients by your number of servings, keep the mixture chilled and shake individual portions with ice to order. Garnish each glass just before serving.
Recipe inspiration: pomegranate, lime and orange are the classic flavor combination in POM Wonderful’s POM Cosmo. This home-bar adaptation uses orange syrup and water in place of orange liqueur and vodka.
Abstinence blood orange spritz mocktail
Love the bittersweet character of an Aperol spritz? Brianna loves Abstinence Blood Orange Aperitif as an alcohol-free aperitivo alternative. An orange slice and a generous wine glass make this simple drink feel festive.
Yield: 1 drink · Prep: 3 minutes · Cook: none · Glass: wine goblet
Ingredients
1½ fluid ounces Abstinence Blood Orange Aperitif
6 fluid ounces soda water, chilled
Ice
1 orange slice
How to make it
Fill a wine goblet with ice.
Pour in the aperitif and top with cold soda water.
Stir gently, add the orange slice and serve.
This follows Abstinence’s published Blood Orange Spritz recipe. Keep the ingredients chilled and build each drink just before serving to preserve the bubbles.
FRE sparkling wine variation
For a wine-style spritz, replace 3 fluid ounces of the soda water with chilled FRE Sparkling Brut, keeping the remaining 3 fluid ounces of soda and 1½ fluid ounces of Abstinence. Add the sparkling wine and soda gently, then finish with an orange slice.
For a strictly 0.0% menu: FRE Sparkling Brut is alcohol-removed and contains under 0.5% ABV; it is not a 0.0% ingredient. Use the soda-water version with ingredients whose labels meet your event’s requirements, or choose a sparkling alternative labeled 0.0%. Check all bottles and syrups when planning a completely dry bar.
