3 Easy Labor Day Cocktails: How to Build a Self-Serve Bar
Hosting Labor Day Weekend? Here’s how to batch three bartender-designed cocktails and build an easy self-serve bar your guests can enjoy all afternoon.
Labor Day Weekend is one of those parties that should feel easy.
Good drinks. Something on the grill. Friends around the house or patio. And, ideally, the person hosting isn’t trapped behind a makeshift bar making margaritas all afternoon.
As professional bartenders, one of the simplest ways we’d set up drinks for a casual house party is a self-serve bar with cocktails batched ahead of time.
For this Labor Day bar, we’re making three crowd-friendly cocktails: a light and sparkling Hugo Spritz, a fresh Watermelon Margarita, and a raspberry-citrus Dog Days Highball with Irish whiskey and Aperol.
The cocktails are designed to be made mostly ahead, chilled, and served from beverage dispensers over ice. Here’s exactly how we’d do it.

What You Need for a Labor Day Cocktail Bar
You don’t need a full home bar—or a ton of specialty equipment—to make this work.

· Seedless watermelon
· Fresh mint
· Fresh raspberries
Juices + mixers
· Cold-pressed lime juice
· Cold-pressed lemon juice
· Cold-pressed grapefruit juice
· Raspberry purée
· Agave
· Simple syrup
· Club soda
· Plenty of ice
Spirits + wine
· Blanco tequila
· St-Germain
· Prosecco
· Irish whiskey
· Aperol
· Cointreau
· Peychaud’s bitters
For a party, don’t make more work for yourself than necessary. Buy good cold-pressed lime, lemon and grapefruit juice from your local grocer or natural food store. The only juice we’re making from scratch is the watermelon juice.
First: Make the Watermelon Juice
Cut a seedless watermelon into cubes and blend until completely smooth. Fine-strain the juice to remove excess pulp. You’ll need 2 cups (16 oz) of watermelon juice for the margarita. Start with approximately 4 cups of cubed watermelon; yield varies, so have a little extra available.

Hugo Spritz Batch Recipe
5 cups St-Germain Elderflower Liqueur
8 cups Prosecco
3 cups club soda
Chill everything overnight. About 20 minutes before guests arrive, pour the St-Germain into the beverage dispenser. Add the cold Prosecco and club soda and give it one gentle stir. Serve over ice and set out garnish jar, lined with a damp paper towel inside and fresh mint.
Watermelon Margarita
Watermelon Margarita Batch Recipe
6 cups blanco tequila
2 cups agave
2 cups cold-pressed lime juice
2 cups fresh watermelon juice
2 cups Cointreau
1 cup cold filtered water
Whisk everything together in a covered container and refrigerate overnight. On party day, transfer it into your beverage dispenser. Serve over ice and garnish with a dehydrated lime wheel or fresh mint.
Dog Days Highball
Dog Days Highball Batch Recipe
5 cups Irish whiskey
1¼ cups Aperol
2 cups cold-pressed lemon juice
2 cups cold-pressed grapefruit juice
1 cup simple syrup
1½ cups raspberry purée
20 dashes (½oz) Peychaud’s bitters
3 cups club soda
The day before, whisk together everything except the club soda. Cover and refrigerate overnight. 20 minutes before the party, transfer the batch into the dispenser and add the chilled club soda. Serve over ice and garnish with fresh raspberries.
BARTENDER TIP: SAVE THE BUBBLES FOR LAST
Never batch Prosecco or club soda overnight. Add anything sparkling directly to the serving dispenser shortly before guests arrive. Don’t put ice inside the cocktail dispensers, either. Chill the cocktails overnight and let guests add ice to their cups before pouring so the batch doesn’t become increasingly diluted.
How to Set Up a Self-Serve Bar for a Labor Day Party
Use a simple left-to-right setup. This is the practical way to keep the flow smooth and drinks enjoyed.
You only need about four feet of table space. Choose a location where people can comfortably stop for a drink without blocking everyone else. A patio, covered outdoor area or the edge of an open kitchen works especially well.
Set the Bar Up Left to Right
START → CUPS + NAPKINS + STRAWS + ICE → HUGO SPRITZ + MINT → WATERMELON MARGARITA + LIME/MINT → DOG DAYS HIGHBALL + RASPBERRIES → WATER STATION → FINISH
Guests grab a cup, add ice, pour a drink, garnish it and keep moving. The drinks progress from lightest to richest, while the Watermelon Margarita gets the center position because it is the visual centerpiece. Keep chilled beer or wine on ice near the water station rather than interrupting the cocktail line.
Your Labor Day Party Prep Timeline
The Day Before
Shop for ingredients and supplies. Make the watermelon juice. Batch the Watermelon Margarita. Batch the Dog Days Highball without the club soda. Chill the St-Germain, Prosecco and club soda for the Hugo. Refrigerate everything overnight.
40 Minutes Before Guests Arrive
Set up the 4-foot table and fitted linen. Position cups, napkins, straws and ice first. Set the three beverage dispensers in order. Put each cocktail’s garnish immediately after its dispenser. Set up the water station at the end.
20 Minutes Before Guests Arrive
Transfer the Margarita and Dog Days Highball into their dispensers. Add club soda to the Dog Days Highball. Build the Hugo Spritz with chilled St-Germain, Prosecco and club soda. Fill the ice bucket and water carafes. Put out garnishes and wipe down the station. You’re done—go enjoy your party.
